NO COOK PROTEIN BARS

Nonstick Cooking Spray
1 ½ cup dry oatmeal (old fashion kind)
2 scoops chocolate whey protein
2 tbs. flaxseeds or hemp seeds
1 cup nonfat dry milk(powdered)**
¼ cup natural or organic peanut butter**
½ cup water
1 tsp. vanilla
½ c. dried cranberries or raisins~optional
Optional: ¼ cup dark chocolate chips/ carob chips

  1. Spray an 8x8 square inch baking pan w/ nonstick cooking spray; set aside
  2. In a large bowl, combine the oatmeal, whey powder, flaxseeds and nonfat dry milk, mix together with a fork.
  3. In a separate bowl, WHISK together the peanut butter, water and vanilla.(I heat these 3 ingredients in the microwave for 30-45sec. to make a smooth mixture)
  4. Add the peanut butter mixture to the dry ingredients and stir with a spoon to form a sticky dough.
  5. Stir in the dried fruit (and choc. Chips)
  6. Using a rubber spatula sprayed w/ cooking spray, spread the mixture evenly in the 8x8 pan.
  7. Freeze for 1 hour or refrigerate for several hours.
  8. Cut into 9 squares and wrap individually for grab on the go snacks.
